yuma README says about makefile variables which are possible to override:
DESTDIR=string: set the debian target build (default NULL)
FORCE_YUMA_HOME=1: use when building SIL libraries to
link against a development version of yuma.
NOTOASTER=1: disables building the example toaster SIL
PRODUCTION=1

I have written a script that converts the existing yuma-tools source to an autotools enabled build. You can get it here

There are a few outstanding issues that I know of (See the README) but it works on FreeBSD and CentOS at least.
